Courgette pancakes

Cut the courgettes into chunks and place them into a bowl. Add the eggs and blend using a hand blender.
Add the flour to the mixture, season with salt and pepper and, finally, add some Olitalia ORO extra virgin olive oil. Use a whisk to mix well.
Use an ice-cream scoop to dose the pancake mixture and cook the pancakes in a non-stick pan with some oil. Cook on both sides.
You can use the topping you prefer for your courgette pancakes; we used some goat cheese spread and cherry tomatoes.
